Lemon Bars


I like lemons. Nothing can compare to the smell of the aromatic lemon scent that surrounds the kitchen when baking these bars.

What I like about this recipe is that it is in small portion. Sometimes, I have a craving for something sweet sourish but I do not want to overeat as I have a small family. This recipe is perfect. For those who can consume a lot, just double or triple the ingredients accordingly.




For those of you who likes sourish sweets, this recipe is recommended. It is a simple recipe with easy to obtain ingredients. It is easy and it is delicious. What more are you waiting for?


Ingredients

Shortbread

1 cup all purpose flour
1/2 cup butter, softened
1/4 cup icing sugar
1/4 tsp salt

Filling

2 large eggs
3/4 cup sugar
2 tbsp flour
1/2 tsp baking powder
3 tbsp lemon juice
1 tbsp lemon zest

Icing sugar for dusting

Cooking Instruction

1. Preheat oven to 190 C.

2. Make shortbread. Combine flour, icing sugar, salt and butter in a bowl. When ingredients are well mix, transfer to a 8 in x 8 in baking tray. Bake for 15 mins.

3. Make filling. Beat eggs until frothy. Add in all other ingredients for filling and mix well. When shortbread is ready, pour filling on top of crust. Bake at 190C for another 20 mins.

4. Remove and let cool. Dust with icing sugar.
